1.5 ton trucks

i have two old chevy 1. 5 ton trucks that i would like to restore and repower. one i want to put a service body on and the other will be used for towing. so what engine and transmision do you all think would give me the most bang for my buck?fuller 6?spicer7 eaton fuller 9?3126 cat?8. 3 cummins?5. 9 cummins?

i dont know the gear ratios yet i dont imagine they are real high. the tires are standard truck tires but on the trailer hauler im thinking about going with low profile

the other thing is i would like decent fuel milage so if any body has any good ideas on engine and gear combos that would give me the tourqu and fuel econimy i would sure like to hear about it
