The flywheels, 5 speed and 6 speed, are . 003” to . 008” over 1. 5” thick when new. Cummins specifies that “heavy stock” not be removed. I imagine not less than 1. 49” would be fine. If you go thinner than that, you may be able to get good service by adding a second washer under the clutch fork ball stud in the bellhousing.

From service manual
"Flywheel machining is not recommended. the fly-wheel clutch surface is machined to a unique contour and machining will negate this feature. Minor fly-wheel scoring can be cleaned up by hand with 180 grit emery or with surface grinding equipment. remove only enough material to reduce scoring (approximately 0. 001 - 0. 003). Heavy stock removal is NOT RECOMMENDED. "
Replace if scoring is sever and deeper than 0. 003 in.

I just replaced mine at 375,000 miles and after a once over with a scotchbrite pad the sucker looks new. I figured with that much mileage, the flywheel would be scored beyond resurface and need replacing so I already had purchased a replacement. I was shocked! It was fine. The friction disc was in good shape, with plenty of surface left (although the springs had started to collapse and rattle). The pressure plate surface was fine. What was failing on mine was the throwout bearing and it was grinding the fingers off the pressure plate.

Thats what I've been told as well, MMeier if its scored beyond what DMather described replace it. However if your going with a aftermarket clutch and pressure plate, than you will be just fine, in fact if you do have an after market clutch then you must resurface the flywheel if its new (OEM) or not . If I still have my 2500 W/NV5600 when its time for any clutch issues, I'll be going with a SBC and will have the flywheel resurfaced if its within specs.
