I just found a good source for buying racoon. I bought one yesterday, and am letting it thaw now. Anyone out there have a good recipe for me??? BTW it is a racoon and not a cat, the head and feet are still on. That should cut a few of you jokers off at the pass. MMMMM Doggie Paaa, we gonna have us some vittles.

I've found coon to be very greasy,much like bear. Best way to cook is slow rotating over a BBQ,so as much grease drips off as possible.
 
Coons found near cornfields are surely the cleanest eaters of all the racoons.

Baked Apple Coon*

1 racoon
2 small onions
2 carrots
1 celery stalk
6 whole cloves
2 bay leaves
8-10 apples
8-10 tbsp butter
8-10 tbsp brown sugar

Skin and cut the racoon into pieces. Remove the kernels and all the aft you can. Wash the meat well in cold water. Put the meat in salt water and set in a cold place or freeze until needed. Put a kettle of water on the stove, add the onions,carrots,celery,whole cloves and bay leaves and boil. After boiling, add the meat and parboil until tender. While the meat parboils, wash and core the apples, fill them w/ butter and brown sugar. When the meat is tender, remove from the kettle and remove as much more fat as possible. Place your coon pieces in a large roasting pan with a 1/2 inch of water and stand the apples throughout the meat. Bake in a slow heat, uncovered until the apples are done and the meat is crusty and brown on top.

If it was a cat, I'd offer a couple of Oriental recipes. Don't have any coon recipes.

It's been over twenty years but, I've eaten coon, cat and possum. Coon and cat I can stomach. Possum is like the greasiest pork you've ever had. Be very careful dressing them so you don't break their innerds when you take them out. I like to boil them first to get rid of alot of grease. Then brown them in alittle olive oil and butter with some mixed seasoning. The rest is like any other roast. Red potatoes and carrots. Celery helps take the heavy taste out. Onions can actually make it seem more greasy. Apples are good if you pan fry their little carcass. Olive oil and butter til brown and then add the apples and some brown suger. I stopped with the cats when my girlfreind's cat turned up missing. The ol' man who caught him didn't care but I sure felt bad. Bikers are a crazy bunch, what most call ***** , they call lunch!

I never tried coon but beaver is pretty good. This family took claim to a pond at my friends cabin. Because their activity was washing out the sides of the pond we took them out. Nothing went to waste there.
 
Kinda quick and easy. Cut the coon up and soak in salt water overnight. Using a pressure cooker with the 10lb. valve, cook for 15 to 30 minutes (more or less, depending on how old and tough the coon is). Drain, place in a large pan, cover with your favorite Bar-B-Que sauce, place in a 300deg. oven for a while, check after about 20minutes add additional sauce (may not be necessary if you covered with aluminum foil), check after about 30 minutes. When the meat's about to fall off the bones when checked with a fork, take out and enjoy.

If you are ever in central Ohio, I catch two to three Raccoons a month on my farm. They tend to catch and eat my live chickens, so I don’t get along with them too well. I catch them in a live trap, so they are as fresh as they can be. I loose 10 to 20 chickens a year from their night time prowling. Didn’t know there was any demand for the meat. Its free for the taking!

I think you mis typed. You meant to say you shot this coon yourself. You DID NOT buy it, because that would be against the law to sell or buy wild game meat. I know the rules vary from state to state, but if I remember my law schooling correctly, its illegal accross the board.

Thats why you never see deer meat 4 sale. Theres a market for it, but there is also a law against it. What the law dont know, wont hurt em!

Place the pieces on an old cedar shingle.

Spice it up with a dash of every spice you've got in the kitchen.

Put into the oven and cook until done.

When done throw away the meat and eat the shingle.
