I used to run 295/70/17 toyo mt's on my signature truck with stock wheels and no isues.

The question: A friend of mine has the same truck in a '08 and auto (not that those matter) wanted to run the same tires but, the tire shop told him he needed ball joint shims to run those tires on his stock wheel. It was a little over a $100 up sale. Has anyone heard of this?

I would walk into the shop, have then show him the shims, than laugh and go to another shop, Never heard of ball joint shims and there should be no reason to change your camber for any reason. Im running 37" tires and know alot of people running 37" toyo mt's on stock wheels with all stock ball joints.

The Toyo M/T's are notorious for casuing a right pull on most trucks. The 295's are pretty mild compared to the wider 35 and 37" versions. The tire shop mostlikely has run into this. The issue can be corrected on Super Duty's since they use ball joint alignment cams which can be used to add/subtract caster independently on each side. Maybe the shop just uses different lingo (shims instead of cams) but the Dodge's don't use them.
