My truck has had this issue for quite some time but hasn't caused me any concern but I'm asking any input on it now. Only in the summer while the AC is on and if I come to a hard stop my check engine light will come on then the oil pressure gauge will bottom out for a few seconds then go back to reading the correct pressure. Truck doesn't seem to perform any differently or anything. Could it just be a bad oil pressure sensor?...this isn't an aftermarket gauge, it's the stock one.
 
Assuming your oil level isn't crazy low, I'd bet on the sending unit.
Oil level is fine... Is there a trick to get the sensor off and a new one in? Hear guys saying you need a 1''1/16th deep socket but when I put it on to test fitment the deep isn't deep enough.... a 1'' 1/16th wrench maybe?
