What should I be monitoring the Pre turbo or after turbo exhaust temps and what should the max temp be set on for de-fueling?

Pre-turbo will react faster so that is preferable.

As to the exact number, that is totally dependent on your setup and how it reacts to your driving style, loads, and conditions. There is no one number that will satisfy multiple scenarios.

A good place to start is 500 degrees above what the EGT gauge will flash to under a heavy load and hard acceleration. Given this isn't some outrageous number like 1500-1800 degrees this should give a relatively safe back down that won't interfere with normal driving.

Testing and playing with the throttle will tell you about what that point is. :)
