I'm about to invest in some new headlights which actually emit light, but I'm concerned that they will be out of focus when I install them. Has anyone had this problem? How did you fix it?

Also... how can I get my fog light to shine farther out. Currently they are illuminating about 10' in front of my truck.

The way I've adjusted mine is to find a flat wall with at 35' of level pavement next to it,the back of a supermarket worked for me. Pull your truck straight up to the wall and with chalk make an x on wall at the center of your headlights, top to bottom and left to right. Do the same for the fog lamps. You can also use a tape measure if you like. Chalk mark a line 25' from the wall for both front tires and line the front of your tires on the line,it's important you're straight with the wall. With your low beams on the high intensity part of the beam should be centered in the x,the fog lamps should be 4" lower than the x. The headlamp up and down adjusting screw is at the bottom of the lamp, the left and right is at the outer top. Your fog lights will vary with brands but should be obvious.
