French Fry question

While I was on vacation, I happened to eat some fries in an amutment park (Silverwood, actually. Sorry Papa Joe. My cell phone would not work in Bayview, otherwise I would have called... ).



What was interesting, is that they were very similar to the "seasoned" fries, like those curly things, in that they seemed to have a "coating" on them. Yet, they didn't have much besides a strong potato taste (MSG???), and this odd feel on the outside - like they were dipped in batter.



I know this is a truck forum, but perhaps someone knows all about these things... I hate a mystery... Can someone tell me what was different about these things? I have not eaten any like them before in my life. I've eaten seasoned fries, curly fries, plain fries, McDonald's fries (years ago), and even once in a blue moon, Dairy Queen fries, and these were absolutely NOT like any of those.

some pre-cut fries are actually compressed potatoe mash (like mashed potatoes compressed into a fry shape and frozen)... they give the "crusty" look...

Yup, it was a batter you tasted. Big thing in fries these days. Adds crunch and a different mouth feel to a plain old fry. If you wish I could get some more detailed information on them. I'll also check to see if more fries are cut or extruded, but my guess is extruded.

Along these lines, why is it that most people LOVE McDonald's fries? I know I can't get enough of 'em.



I heard the old urban legend that they're soaked in sugar water... but I doubt that's the case.

The Micky D fries are soaked in a solution of beef extract flavoring, probably sugar too(unknown about the sugar). This beef flavoring upset a bunch of vegitarian Hindu's several months back. I think they tried to sue. Saying they ingested beef , didnt know it, and it was a serious violation of their religion.



I myself dont like the taste of McD. fries. I havent since they stopped frying them in saturated fats.



My 4 yr old son has never liked McD fries, but likes Burger King fries. I dont know why.
 
So they DO batter-dip these things.

If anyone comes up with what's in them... i'd sure like to know.



Sugar water? I have cut up potatoes to make hash browns, and "soaked" them in sugar water. They really BROWN nice :)



Works with pancakes, too.



I take normal "complete" batter (Best I've found so far is Snoqualmie Falls Lodge Pancake Mix - the regular kind), add about 2 eggs for a large amount (enough for, say, 25 pancakes) above what's in the mix, add a generous amount of lemon juice AND add a quarter cup (orl ess) of white sugar. You then make this rather thin with water and fry... Pancakes are cakelike, brown excellently, and are "soft". Usually so flexible it's hard to flip them, but boy are they good :)
