We just put 250 injectors (~40hp) and now when we start it up the 97 will smoke real bad and will hardly idle. Its white smoke the only other thing done to the truck is the fuel plate has been slid a little forward. What gives? How do I fix it?
 
Depending on how much smoke you're talking about, white smoke is normal on cold starts. The only way to fix it is to take the injectors out and put the smaller ones back in.

More fuel+cold cylinders & pistons = white smoke.

You should see a set of 370s with ceramic coated pistons smoke on first start. The white cloud of death will fill a parking lot.

It a pretty big cloud and is really hard on your eyes but if changing inj is the only way to fix this then it can smoke all it wants.
 
You might want to try and have the timing bumped up a few degrees. How does your truck idle when warmed up? And at what RPM? Maybe it also needs bumped.

Yeah, I'd say if it didn't do it before the injectors, then there is nothing wrong with it, its just the extra fuel not getting a chance to burn b/c of cold internal temps.

That eye burning, nasal passage clearing smoke is good stuff.

Adjusting the idle will definitely cut down on the smoke if it's too low, if the idle is right and you make it higher, there will just be more white smoke coming out but for a shorter period of time.

Bumping the timing up will help also, and you'll get that nice fuel knock sound.
