Help with tires.

I am in need of new tires in the next month and was thinking of going with the 255/85/16's in a BFG mud terrain or a Dunlop mud rover. Will these tires hold up to a max gvw 3500 as they are only 8 ply with a load rating of 3000lbs? I don't really need the sidewalls blowing up on me this winter 750 miles from home. I noticed that tim "the tool man" has this setup on his truck, but curious if the sidewalls rub under a load?
