I posted a while back about a clunking noise in rear suspension, from this site I was told it is the rear helper springs bottoming out. Since I drive a considerable amountof the time off road, it gets very annoying. could the rear helpers just be removed to remedy this problem?

Yes, but you need to replace the helpers with air bags. You fill or deflate the bags depending on load. Keep the fillers separate side to side which helps with anti sway properties. I use a small bicycle pump to fill. You can fill till the truck is level and be on your way. Air bags really help handling with a load in the back off road ;)
