Top of oil filter housing has a 1/8npt port for oil. As far as water temp the best place is the back of the head on the driver side, where the factory gage picks it up from.

I don't know if all of them are like mine, but the port on top of my filter housing is unregulated pressure. When the oil is cold I can easily peg a 100 psi gauge with only a slight rev. If I were to install a water temp gauge I would use the port where the jiggle pin is installed.

The mechanical gage on my 4bt does the same, once it is warm it’s accurate. I assumed it was because the oil was cold and thick, creating more psi. Once warm, thinned out flowing through passages easier, reducing psi.
