My oil pressure gauge has been acting fluky lately, mostly after sitting overnight. It will drop to zero when slowing to a stop but quickly go back to normal. After the engine is heated up it has been acting normal.

I was finally able to catch it when it dropped to zero and checked the bypass cap on top of the valve cover and no oil is coming out. When the gauge went back to "normal" there was still no oil coming out.

Is the oil pressure sensor/sending unit the culprit?

It could be the sender as you suspect. Still; I would attach a mechanical gauge for peace of mind and to compare accuracy of the electronic unit. A wonky oil pump might generate the symptoms you describe but I imagine there would be some accompanying noise.

Will definitely be putting manual gauge on. Would you put one in the cab or just on top of the filter?
