Not a tiger shark but Jet ski/boat in general.
You want to add Sta-Bil to the fuel . If you can, shake the jet ski to get fuel and sta-bil mixed, filling the tank is the best bet as it does not allow for condesation as easily. Run the motor for 2-3 minutes to get the Sta-Bil into the carbs/FI. Recomended to shut engine off by spraying Engine fogger into intake into the engine sputters and dies (this is an oily soultion that coats intake and exhaust to prevent rust I am undecided on need on 2 stroke)
You want to drain the water out of the block, there should either be petcocks to drain water out of motor/exhaust or instructions to roll on one side to drain. (with the size of a Tiger Shark I would believe there would be petcocks, normally one on exhaust and two on the motor) For added freeze protection I always disconnect the water supply line and drain that.
Then I leave cover cracked open about 1/2 inch to inch with a piece of wood to ventilate and cover it.
total time about 45 minutes sourcing the Sta-Bil (fuel stabilizer) and engine fogging oil can take the longest boat shop should have them as well as some auto stores.
