I don't have air bags but would guess that you would air them up after hooking up the trailer to a pressure that levels out the truck and trailer. Although I see people doing it all the time towing without the truck and trailer being level can create some very interesting steering moments especially in high winds or if you needed to quickly swerve. I use the sway bars at the toungue of the trailer to level out the load... they do work pretty good.

we have air bags on the back of all our trucks... . you are not to let the pressure get below 15 psi... and each time we hook up to a trailer we measure from a spot on the body to the ground... and add pressure to level the truck back up... . what we really care about is the truck being level for the lights... .

Be carefull using to much pre load on the spring bars... ... ... ... I have accidently smoked my 37's getting on the freeway with the trailer in tow

And those aren't actually "sway" bars. They are load bars, to distribute the weight evenly from truck to trailer. ;)

Jelag, why don't you run a load leveler valve like on the big rigs? Self levels no matter what the load?

I'm going to put one on mine when I put the bags on. I have a dual needle gauge so I can watch main and bag pressure on 1 unit. I'll also have horns, air chuck, etc. Not enough compressor for air tools, yet.
