Engine/Transmission (1994 - 1998) 5spd shifter question

On hot days when I'm driving long distances uphill (unloaded), my engine temperature will reach 210-215 degrees. I changed the coolant and put in a 180 degree thermostat about 3 months ago, so I'm not sure what else could be the problem. I am getting ready to tow a 20' trailer loaded with rock or hay, so I want to get the situation fixed beforehand. When the engine is cool, the coolent level in the radiator is as full as possible and the reservoir is at the full mark. I haven't checked the level in the radiator when the engine is warm, but I don't think that it drops much. Finally, I can't hear the fan engage, but that could be due to the fact that I am straight piped, have an aFe, and listen to music constantly.

Make sure your radiator does not have oil residue in it. If so remove the rad and power wash it and relocate the draft tube to the bottom of the motor.
