I disconnected the hose from my boost elbow and plugged it off.

Is this what everybody means by "boost elbow mod"? It did what you would expect, much lower egts, boost went from 20 max to 28. My only other mods are opened air box, K&N, and a Jerry 4" all the way back. The check engine light came on. I did a search and found a link to trouble codes. I am getting code

p-1693 (DTC detected in ECM). I noted other posts that said it "just happens" and to do the batt. dis-connect. I figure it must have to do with plugging the boost elbow. Is there another fix, or do i just have to keep doing the batt. thing?

my next plan is to add DDII's to make use of my new found boost

If you don't have a boost module (or EZ box, Comp, pretty much any fuel box) You'll keep setting the over boost code and yes you will have to keep doing the battery thing until you get a boost module or box. Remember every time you set a code it will leave a trace in the ECM for the stealer to see, even after unplugging the batteries.

The boost elbow actually comes with some fuel boxes, like the Edge EZ, and pretty much does the same thing you did. Mine is a 98 and I'm not sure how the wastegate is set up on yours, somebody in the know will pipe up I'm sure.

If you don't have more fuel (ie bigger than stock injectors or fuel box) you gain very little with more boost. Boost does NOT create power without fuel. If you don't have power mods, go back to the stock set up.
