I just bought a 2003 Dodge 2500 3/4 ton and the previous owner installed a 2 inch lift block between the rear axle and spring. Would like to go back to factory set-up, so I missing the middle spacer/block. Anybody take theirs off to put lift kit in and want to sell their old one? Or, what would it be like to leave middle block out and just use the other two factory blocks?
I attached a picture of what truck should look like so you know what I mean by the middle spacer.

My 03, 2500 looks exactly like yours. No modifications.
I have often thought of removing one or two of the extra plates to gain separation between my bed rails and the 5th wheel. Not done yet, but I have raised the trailer so it is probably no longer necessary.

I removed two of the spacer plates on the 05 I had had to have new shorter U bolts. It worked to lower the rear a bit. Only issue I found was when you service the rear breaks the one caliper bolt is now blocked by the spring so you can't use a socket but a box wrench works just fine.
 
The middle spacer your talking about is an overload spring, and I would not remove it. You can remove the two short leaf plate spacers to lower it 1".
