I believe it's related to the fact the the newer industrial/OTR Cummins are black w/red valve covers. Twas back in '94 when we got the new N14's aka 855's that I first noticed this. I liked it then... ... ... . I like it now!

CB, red just looks good under the hood. Red=Fire! Driving truck while pulling up to a fuel island, with OTR trucks hoods open, a quick glance can indicate their engine. Greenish/light blueish a sissy Detroit, yellow a Cat, black with little red a N14 Cummins. But if you encounter a engine thats just about all red shining at you, you see a Signature 600 Cummins. Oh yeah! Looks alot better than the dull chipped black paint. Bill
