I got a fuel pressure gauge going in soon. What exactly do I need a snubber for and where do I get it? Will I damage my gauge without it? Can't find any info on it.

look here, type in snubber in the search function. Look for the orfice-style-low presure snubber. I'm using the stainless 1/8" . 008 orfice fitting on my Dakota digital sending unit.

Benny:

A snubber is, as above, a small orifice in the line that limits quick pressure changes. Quick pressure changes can spike your gauge or sender, and damage it. Also evens out the gauge, so you get a more average reading instead of instantaneous.

Chemiquip Snubber

I put a 12se Chemiquip snubber in my connection to my Autometer transducer after pressure spikes blew my first transducer. This is a porous metal type snubber that will work for transducers or mechanical gauges. The 12 designation stands for 1/8" npt female by 1/8" npt male. The s stands for stainless steel and the E for how much restiction the snubber has. The e seems to work well for diesel fuel winter and summer. It is also available in brass for a little less money, which would be a 12be, but i went with SS for the strentgh.
