Sorry, but there's no way to relate the two. Once the engine has reached operating temperature, the water temperature is a very weak function of EGT - too weak to measure with the RTD used to sense water temperature, for sure.
The water system is a big heat sink, and the fan and thermostat are working to hold it at a constant temperature of around 190°F (or so). As a result, it's very slow to respond to changes in EGT (as a well-designed cooling system should be).
