I have had my fuel filter changed at the local shop a couple of times and have replaced it myself a couple of times, but haven't replaced the water in fuel sensing unit. Is it's replacement really necessary at each filter change? Next time, I would like to replace the sensor. Anyone have some tips on doing this? It looks a little tricky at first glance.

As far as I know the water sensor never needs to be replaced.

Your 97 is the same filter as my 98. It's a cannister filter.
The only reason you would need to replace it is if you broke it off while changing a filter.
This is highly unlikley.
