Off Roading Heim Joint life?

I have watched hundreds of videos of sled pullers here and on the Diesel garage and was wondering what it is that I am seeing while you Big Dogs of pulling are spooling up  . It is like a popping or surging until it hits high rpm or a load starts. Is this just the mass amounts of fuel or is it a generous load of water Meth or Nitrous?or am I way off.

How is this done on a 24 valve? Is it a special box that gives lots of timing? I can see it on a 12 valve. What are the advantages of this,Besides being a show pleaser and awesome to watch?

I need to quench my intellectual thirst for knowledge :D .

Most of the pullers I know about run 12V engines, especially when you get into the super stock classes. I'm sure any 24V ones spool up much smoother due to the variable timing.
