what is "offset" in regards to wheels?

i am looking for a set of wheels for my new car for snow tires. i want to keep this as close to stock as possible, but am having trouble finding wheels that have the same offset as the stock ones. the bolt pattern is a common one (5x114.3) but the offset, (51) is tough to find. 38-45 offset seems to be much more common, will that work? the stock wheels are 16x6.5 +51 offset bolt pattern 5x114.3. thanks for any help.
 
Offset refers to the distance the mounting surface is from center of the hoop. Backspace is the distance from the back edge of the hoop to the mounting surface.
