2nd Gen Non-Engine/Transmission What temps to monitor?

So I have a dual temperature gauge from Westach & I was planning on monitoring the engine oil temp & the rear end temp. After reading posts it seems like there probably isn't much need to monitor engine oil temps if my coolant gauge is fine. So what should I monitor? I was thinking intake air temps but I don't know what they should be to begin with & my gauge may go a little high for that. Maybe the 5 speed or transfercase?

Anything else? I don't mind drilling & tapping. I already have all the standard gauges, pyro, boost, FP.

What transmission? Auto?-transmission temps. Ought to fill out your Sig. so we could see what you have.
