From what I've read (NOT from experience), the fuel doesn't actually "gel" but wax begins to form in the fuel which accumulates in the filter. This takes time as the vehicle is running so typically it happens several miles down the road, not when you start.
Now 2. 5 hours seems very long to me, as all that warmed fuel being returned would certainly seem to preclude this condition over such a time period.
