I found this link showing a template for modifiying the plate.

What is meant by the many different numbers available on the TST website in the plates they sell?

Why do they recommend a #10 plate for a 215 hp engine and a different plate for the 180 hp engine?

The TST recommendations are mostly to protect the drivetrain. The injection pumps are different for each HP rating, thus the plates to achieve a HP gain that will not thrash the transmission or clutch are different. In general, the smaller the number the more power. You can just grind a #0 and control power and EGT with your foot. You MUST have at least an EGT gauge before you start messing with 12 valve fueling.
