You are correct in that you definitely do NOT want to run 19.5 tires under pressurized for the simple reason that there is no bead lock that hold the tires onto the rims and ALSO excessive sidewall flex from low pressure can and will eventually lead to sidewall failure from fatigue.
The industry term for it is "Sidewall Zipper Failure" which obviously cannot be pretty.

I am not sure what is the lowest pressure you can run in YOUR tires (it differs mostly by size, but also by manufacturer). For instance, when unloaded and not towing I can air down the 225/70/19.5 G tires on my truck to 70 psi based on the load inflation chart, and IIRC one of the Michelin 19.5 tires (forget which one can be aired down to 65 psi) but that is the lowest I have seen for these tires. I highly recommend finding the load inflation chart from the manufacturer for your tires and air up accordingly. Meantime, I owuldn;t run any less then 75 psi UNLOADED and more if you are running loaded/towing.

All that being said, keep us updated how those tires work out for you mileage and ride wise.

Thanks Seafish! I could not find a load inflation chart on the Hercules website so I emailed them. Hopefully they respond. I did find a Goodyear load inflation chart and for the post 2006 245/70R/19.5 it shows a minimum of 80 psi. This chart has the same max psi of 110 psi and single axle rating of 4540 as the Hercules H-702 so it is probably close.
 
Hercules provided a load inflation chart showing a minimum inflation of 65 psi and 3085 lbs. Rickson's load inflation chart shows a minimum of 80 psi and 3640 lbs. I decided to play it safe and aired them up to 80 psi.
 
The Toyo chart starts at 80 for my 245/70R19.5 M608z's but I emailed them and was told I could go down to 70.

If Hercules says 65 then I would think you are safe at 65.
 
I run them with 65psi all the Time fully loaded to the GAWR.
Those tires are far more capable then we can force them on our Minitrucks.
Never ever I'll drive them with 100psi, that doesn't make any sense.
 
Thanks guys! I'm making a run to the ranch with a small load (new set of Bobcat tracks on a pallet) and will run with the 80 psi on the trip up and depending on how that rides I will drop it back down to 65 psi on the way home. Anxious to see how these tires run on our county maintained gravel roads. I have 16 miles of dirt once I get off the highway so that should be a good test.

Handling-- Excellent! Very stable and maneuverable.

Wet handling-- no issues at all, even on snow/ice. The 8500lb truck helps.

Road noise, -- low, very low. Barely more than an AT, if any.

EVENESS of wear (assuming proper rotation) -- very even for a 5 tire rotation.

and expected mileage wear -- so far lower than expected, but of the 10K miles I have on them over 4800 are towing with lots of dirt/gravel towing. My usage is harder on tires than most so it is not a fair observation. I expect to get 40K plus of them thou...time will tell.

as well as psi (front and back) you have chosen to run (my truck also weighs about #8200 unloaded)-- empty I run 70/70 which is the min allowed by Toyo. For loaded I run about 5 psi higher than the Toyo load charts, maybe 10 depending on speed.

The first 1/3 wore down VERY fast but they seem to be tapering off on the wear. I haven't put too many miles on them this year thou. Hopefully next year I'll get back to my normal camping routine.
