If you can get back on the dyno, try level 1 vs. level 5 on the Comp (keep the same sub level though - that'll help with consistency). Then you can see quickly if the wire is tapped. There should be a major jump in HP. Or just take a couple of runs down the road on 1x5 and a couple more on 5x5 (again, same sub level), and watch your pyro. If you're getting the extra fueling on level 5, your egts will be substantially higher (200-300* easily). If the Comp is the only HP mod on your truck, then your numbers are exactly what they would be if the wire wasn't tapped (bad tap, bad/wrong wire pierced, bad box, whatever). Just having the Posi Tap screwed down doesn't mean it's making metal-to-metal contact; the tap may have pulled some insulation in with it.
The rpm thing is odd, since all they're doing is using an "eye" to watch a piece of reflective tape on your balancer. The only trick is getting the eye lined up with the tape. And the last time I was on a Dynojet, I couldn't get a torque reading on the first run because the optical sensor fell off. You have torque numbers, so I'd say they probably we're getting the info. How experienced is the shop in dynoing diesels?
Something that does look odd is the 85mph bump in your graph. That shouldn't be there. The only dyno run that I have with bumps is the one with a bad pump wire connection (it actually looks like shift points on the graph). But I suppose that could also be trans/clutch/tire slippage. But other than that, your graph could just about overlay an EZ-only dyno sheet.
