I have heard that I can't put 285 tires on this truck as it will mess with the transmission shift points. Is this true?

No, as Ozy mentioned 285's will be fine. The only thing it will effect is your speedometer, it will read slower than actual speed. Fewer revolutions per mile for the larger tire.
 
Shift points are taking care of when you calibrate your speedometer to the bigger size. Your speed will be off with bigger tires. You’ll not really notice too much with 285, I believe it’s just one size jump from stock that came from factory. Like mentioned above 35” tires will fit stock and will not notice too much other than maybe a little lag off the line with heavier tires. That’s with 3.73 gearing.
 
Yes, if you put taller tires on it will change your observed shift points and trans function. Resetting the pinion factor will only changed observed shift points. Shifting in a 48RE is basically determined by APPS reading and output shaft speed, has very little to do with actual wheel speed.
