What is the max towing capacity of a 2003, 3500, 4 door, single rear wheel, 6 speed, HO? How heavy of a gooseneck can the truck tow? Of course within the factory specs of this particular truck.

Actually it is 14,250# for the 3. 73 gears and 16,250# for the 4. 10s. These numbers are for a 3500 QC Short Bed SRW 2-wheel drive.

The other part of your question was the weight of the gooseneck permitted. That depends on the available load for the configuration you select. The 3500 SRW QC has an available load of around 2500 - 2700 pounds depending on what options you add, 4x4, etc. Deduct for passengers and other cargo. If you go with a 3500 DRW, you can get either the QC or RC. The RC has an available load capacity over 5000 pounds. If you are doing much towing the truck width helps with stability, and does not cause problems because the trailer is still wider than the truck (except for the mirrors).
 
The 3500 SRW QC 4X4 has a GVWR of 9900 lbs, with a max payload of 3040 lbs, I took mine to the scales a couple weeks ago, with me and 3/4 tank of fuel it weighed 7220, leaving about 2680 for payload, add in some passengers, a couple dogs and stuff and it would be maybe 2000lbs.
