You are most likely low on refrigerant. The system will actually pull down on the low pressure side 10-30 PSI when the RPMs come up. Which on a system low on refrigerant will cause the low pressure sensor to shut off system then pressure will come back up and it comes back on. Been in a few cars that at WOT the AC shuts off for max acceleration but have not seen that in any of my trucks. Once up to speed it its still probably cycling on/off but at speed there is residual ice build-up that will keep it blowing cooler air.
