Is it just me or does my truck really steer better [less drift] when pulling my travel traler with load leveling and sway bars attached?

As your front end height changes so does the steering geometry: caster, camber and toe. Find out what the alignment specs are when you are loaded and have it aligned to thoes #"s when m/ t.
Mine did the same and I had the toe changed +. 2* and made a big difference.

Dude,

It may also have to do with the extra weight on the axle. The equalizer bars on your hitch transfer some of the trailer's hitch weight to the front axle.

I kind of doubt that this is the reason, but it might be worth considering. I would guess that the change in geometry is more likely the reason.

PUMPERDUDE,
Most heavy duty trucks/vans handle better with load on them(carrying or pulling).
