I'm not familiar with the Autometer gauges specifically, but if they use a connection to battery (+) for signal conditioning, what circuit did you tap for that?
Besides that, where did you take ground for the gauge? Is the thermocouple wire routed near any of the truck wires (the headlight wires, for instance)?
Thermocouples produce very tiny voltage signals (<1 mV), so they can be probe to interference, as you've discovered.
