If the engine is cold, it should read ambient temp or close too it. My movement from zero is barely noticeable when I turn on the key

If you wired your pyro the way I did (hopefully the correct way), the gauge is getting power even with the ignition off. The temperatures you are seeing are EGT's after the engine has shut down. 200 degrees is about what I have. Even a couple of hours later, it may not drop to zero.
 
I let mine cool to 300* before shutdown then when I shut the key off it goes to 400*. However when I go to start the truck again it goes down to 0* or somewhere between 200* and 0*

I would think that it wouldn't matter what it reads when turned off. As long as when its on, it reads close to ambient temp. before starting the engine.
