When a gauge, or any other electrical device, calls for being wired to the ignition, what's the best wire to tap from? Should I just find one that is "hot" when the ignition is on? Thanks.

The back of the cigar lighter is a convenient source. I used this for a transmission temperature gauge on the advice of forum members. The manual shows a special tool for removing the lighter to get at the wiring, but my lighter just pulled out. If I needed several supplies, I would buy one of the slave fuse panels which daisy-chains off the main fuse panel. Nick.

Check out Painless Wiring kits. Geno's has one he sells or you can go to the website. They have a distribution kit that gives you switched hot and constant hot that is fused and makes any installations a snap.
