I am running 265/75/16's that came stock on the OE wheels. Heck, I ran 285/75's on my last 2500 on the stock rims without any problems whatsoever.
 
Shouldn't have a problem. But if you do the tire-man may blame too narrow of a rim. Most 265's call for 7inch min. You may already have these but I could'nt by sig. I run all ter ta's on stock 6. 5's in summer no problem.
 
I also have 285's on stock steel rims. Absolutely no prob. Gonna go w/ that same size on the next set. (Thinking of trying the Dunlop mud rovers though)



Did not notice a loss in stopping power either. Had half the pads left at 50k miles. I say this because alot of trucks lose braking power due to the extra leverage. No prob w/ our truck, no rubbing either. Also tows fine with them (but have a 6 speed).
 
I put a set on when the truck had 8 miles on it (BFG 265 75R16 all terrain).



Picked it from the dealer drove around the corner had them changed. My dad talked me into it he works for Bfgoodrich which is owned by Michellin. He can't stand Michellin. I was happy to get a more aggressive tread pattern. Personally I wish I had went for a wider tire.
 
Yes. Mine has 265's Firestone Steeltex's on the stock chromeys. Did a stint out west with the family this summer shortly after purchasing it (roughly 6k miles round trip) sustained a usual speed around 80 - 85 & hit brief speeds of 95 - 100 (3:55 gears) and it was fine. Yea, I know 95 - 100 with the family, I only had the truck a few months and just couldn't resist it, especially since the limit was 75 and no one was in sight for MILES. I'm probably going to go up to 285's soon, since I hear they dont rub and give a much better ride. Try a search under "tires" - about 2 - 3 weeks ago, good post, lots of info on tires. my $. 02
