My Italian brain almost blew up- "Mozzarella"- preferably fresh Buffalo, Parmeggiano Reggiano and Provolone- us greaseballs certainly know how to cut the cheese.

I like Cheddar, American, and Provolone a lot.



Don't forget the cheese - eat cheese every day. :D A day without cheese is like a day without sunshine. :)

I am fonically challanged I can't help it I didn't have a bag of cheese beside the computer to get the correct spellin for it.

Sure wish I could get some of that Water Buffalo Mozzarella and Provolene like I used to get over in Naples Italy about 15 years ago. The very best mozzarella I've ever had.



Stop at the mercado, buy a ball of that mozzarella, get some good bread rolls and some fresh prosciutto - set for the rest of the day.



Here in NM, a good cheddar melted and mixed with green chili - great for tortilla chip dipping.

Yeah nothing like it- some specialty groceries have fresh stuff- maybe you can get it shipped from an on-line purveyor and have them throw in some prosciutto di parma!!! Italians and most Europeans in general know how to live and savor the freshest ingredients. We are the land of the processed food and it ain't getting any better.
 
Pepper jack, colby. provalone & sharp cheddar for sandwiches and on crackers.

Mozzarella for pizza and lasagna.



Eat more cheese and drink more milk to keep the family farm going.



Don't forget the venny sausage for the crackers, we need to thin the deer herd some more up here.
