Upgrade stock turbo or HX 35?

So being a relatively new Cummins owner, I am wondering what a normal stock temperature gauge reading should be for moderate to heavy mountain driving in my '91... . currently the gauge is going as high as the middle of the gauge (straight down) . The gauge will also 'bump' up at idle, but my rad seems to appear good, and my thermostat and head gasket have recently been replaced...comments?

I've learned the hard way its usually the easy things that fix problems, my stock guage does the same thing, I installed a water temp guage and it holds strong at 180, while my stock guage moves all over. I have a new radiator and themostat and evans coolant, if I were you I would replace the sender first, it's located on the driver side at the rear of the head, almost hidden.
 
My stock motor in the 110 desert AZ heat hangs around the first mark on the temp gage (not straight down the middle). Anything over that and the fan clutch kicks in and it sounds like a 747 under the hood.

I did some towing up to Las Vegas a while ago and in the mountain grades with a 6000 lb trailer the temps were around what your are seeing.

I have a new themostat and water pump for the summer.
