went and put words on the page I didn't write. . I don't use a rotary switch like you discuss, but it would likely work just fine.
You can source a tiny center on-off-on switch at Radio Shack etc. that will work out well. (you can usually find a place for it on the a-pillar mount etc. )
The switch is not capable of carrying very much current. But for this application little is required. You will also need some 20-22 gau. stranded wire, small dia. solder . 035 or less and a low/med heat soldering gun/iron for reliable wire to switch connection. If you to be able to remove the switch then add some disconnects/pigtails to the wires a few inches below your soldered connection.

Wire the "S" terminal on your gauge harness to the center pin on the switch and your sender wire from your sender/sensor from the trans. to one of the "on" terminals on the switch and the diff. temp sender or other sender to the other on terminal.
Depending which way you have connected it will read two sensors/senders depending which on position you have selected.
