I have been doing all my numbers trying to figure on 14k or 12k lowboy trailer capacity, when suddenly I remembered that there is his annoying GCWR that I also have to take into consideration. Oddly enough, I couldn't find it on the door like the rest of the info. So, any ideas what my 95 2500 might have and do the scales care more about the GCWR or the GVWR or both?

Coalsmoke,

Both. You'll also need to get a commercial tag for your truck (unless its an RV) and licence it for the weight. Weights need to be posted on the door and I believe you need some commercial endorsement on your licence. I just went through this a few months ago. There is a max. GCVW that you can haul without going through these hoops. Sorry, I can't remember the exact weight. 5,000 kgs? Check at the scales, they should have the info you need.
