A #10 plate in a 215hp pump in the stock location with the stock turbo will have high EGT's when you run it hard. Your 16deg timing and 4" exhaust will help but you still need to drive by the EGT gauge.
Here is my experience with a 98 215hp truck. When I bought it 3 yrs ago it was stock and it made 210hp and 430tq on a dynojet on a 80 degree day.
A few days later I installed a #10 plate(stock location), 3k gov springs, afc kit, ATS ex manifold , PDR-HX40 turbo(there are better ways to improve airflow now), complete 4" exhaust with straight thru muffler. Piers at Piers Diesel Research told me it would have 1500 deg EGTs and it did. This was with 42lbs of boost. Avg fuel mileage increased by 1mpg. Performace increase was

I then installed a PDR Cam, 24v intercooler and advanced the timing to 16. 5 deg, this lowered EGTs to 1300deg. and avg fuel mileage increased another 1 mpg.
So my suggestion is to put the #10 plate in and adjust it (. 030-. 040 back) for reasonable EGTs and increase airflow before going to larger injectors. You can grind the #10 plate to a #100 later for more top end power.
Also, a good, strong feeling stock clutch will last about 3 weeks with a #10 plate in the stock location. South Bend Clutch can help you with this.
