i grinded the stock fuel plate to resemble a #5 plate. i have it all the way forward with the afc housing all the way forward. the starwheel is 5 clicks from totally lose. is this the best way to run this?
 
There is not "best way" as everyone's driving style, tolerance for turbo lag, and tolerance for smoke is different.



I would check the adjustment on your governor lever and if your like the way the truck behaves and drives I would not worry about it.
 
you have to consider how deep you ground it... think about it... you could replicate a #5 on a stock plate and have the full fuel portion of the plate dang near 1/4" off the top plate... or you could grind it where the full fuel portion is flush w/ the top part...



makes a HUGE difference...
