They even make special jacking tools for re-installing cast iron exhaust manifolds. You put them between the pipes to spread the manifold so th ebolt holes line up.

Personally, I'd toss any header so warped and shrunk it needed a spreader to reinstall - I can just imagine what the port alignement looks like on a manifold like that...
