Got your email concerning the new smoker--mine did come with a drain-hole (needs a tin can underneath). . I installed a thermometer in the lid, but never knew about a separate reading for the grill temp. . makes sense, though... having trouble with my email--I can read them, one line at a time, thru the little window :mad: , but not in a fullscreen view, and when I "click" the "Reply", all I get is a temporary outline where the new "window" will be located, but then it disappears, so I can't send a "reply" or an outgoing "new" message... . Hope people don't start thinking I'm antisocial, dead, or P. O. 'd at them... probably just a "settings" problem, but if all else fails, I'll use my darn aol address--(don't like that box, but at least it works :p )

BTW- did a couple of chickens and some ribs and a block of that nasty "chopped ham sandwich stuff" on the grill y'day... turned out dry, but nicely flavored---too much heat, not enough humidity... practice makes perfect, I guess---rm

Sounds like your on the way to meat smoking heaven. I've had some problems with dryness also. Now, I just take a large can, fill it with water and set it above where the heat comes out of the firebox. The steam keeps the meat moist and seems to work well. I've even used apple juice in it which imparts a unique flavor.



Got a couple of sides of gorgeous ribs ready to smoke tomorrow. Need to clean out the ashes from the last cook and get ready.
