For some reason I let my ball joints go a little bit past the comfortable wear limit. I went to price new ball joints and found out they make . 5, 1, and 1. 5 degree offset joints. How do I know which offset joints to get??

Your alignment shop should be able to tell you which joint is needed to bring the camber into specification... ... it has to go on the rack first..... it might not need an offset joint. .

can they tell even if the joints are worn really bad?

Probably not.

How's the tire wear been over the 'useful' life of the ball joints? If you've had good even tire wear then I'd go with the same offset that the current ball joints have.
