I did a set of mid 80's Corvette wheels for my Camaro. I started with 600 grit and worked my way up to 1200. Then I switched to polishing compound.
Polishing machines are a lot faster on steels than hand work but on aluminum I've seen a lot of jobs messed up by someone who isn't real skilled. Using a machine can remove a lot of material real quick and leave an uneven surface. Of course, most people wouldn't notice unless they looked real hard at it.
