there should be a little set screw on the back of the fuel pump. if you do a search you can come up with a picture to show you where and what it looks like. shouldn't't be that hard to find and adjust.
 
You need a 10mm box end wrench. There is a screw on the back end of the pump that has a lock nut on one end. The head of it is the idle stop. Loosen the lock nut and you should be able to turn the screw by hand if you pull the linkage so there is no pressure on the screw. This adjustment is by feel because you can't see the screw and adjust it at the same time. In fact, seeing the screw at all is tough.
 
I'll second that, Joe, I tried to reset my idle when I converted to 5 speed. I did find out that you can get a measure of adjustment on idle if you loosen the three bolts that hold the throttle position sencor and the throttle bell crank. There is just enough movement there that you will be able to adjust about 400 RPMs. Hope that is enough. It worked fine for me. I just plain give up on that throttle adjusting screw on the rear of the pump.

96 2500 extended cab, converted to one ton. transmission converted to 5 speed. DANA 80W/Duallys, two wheel low mod, #8 plate. tabbed the KDP.
 
You DON'T want to use the TPS for a throttle stop. In your case since you have converted to a five speed it won't affect your transmission operation, but for anyone with an automatic it will. The adjustment is actually pretty easy once you locate the adjustment screw.
