The most versatile and durable all-around rifle is probably a quality bolt-action . 30-06. It will put meat on the table, can snipe jackboots at 500 yards, wipe out rabbits in the garden with a light load, and generally serve any role you want a rifle to serve as long as you don't want to shoot fast.
If you want to shoot fast and be able to take large game easily, an autoloader in . 30-06 or . 308.
If you aren't planning to go after anything larger than whitetail deer or humans, an AK / AKS is a very good choice. I'd put AR-15 second, having owned both and shot them extensively for many years.
If you're looking for something reasonably priced that you can throw in the truck, walk around in the rain with, etc, a lever action in . 30-30 is awful hard to beat.

one of the above, it would be the . 30-06 bolt action, with the . 30-30 lever action running a close second.
