When I take the battery cables off the truck goes dead

Amen to the Very well advised above replies! You are not dealing with an old, NO electronics, '67 Chevy that you can do this with. You have a bunch of electronics in your truck that could be damaged by this. If you want to check charging voltage then use a good digital volt meter across one of the batteries while the engine is running with the AC on and the headlights on as a load.
